    I’ve owned a Silpat (and appreciated non-burned cookies!), but now prefer parchment paper since the Silpat always seemed a little greasy, even after I cleaned it well. Parchment paper can be found in the grocery store with the aluminum foil and plastic wrap. Martha Stewart, you were so right 🙂

      Silpat is good for cookies and pastries that shouldn’t brown at al like macarons. Sometimes you want a little caramelization or you want the cookie to have a little something to cling to, and Silpat diffuses the heat too much. I prefer a heavier not non-stick pan with a sheet of parchment over. If your cookies are burning too easily, your pan may be a little too lightweight.

    Number one is so timely for me as I head into a meeting tomorrow to discuss my career advancement tomorrow. As someone who hasn’t been in a position to really negotiate before, I will be tomorrow and, frankly, I am anxious about screwing it up.

  3. I have 2 Silpats. One for sweet, one of savoury. It is gross when I mix the two. 🙂
