Discounted. Love a deal? I spent hours window shopping at Nordstrom Rack this week.  Top finds: a Rebecca Taylor jacket, a $17 ruffle blouse, and a Cinq a Sept party dress.

Confusion. Your self-worth is not your net worth; don’t get it twisted.

Every week it happens. My night to cook rolls around and we’ve used up everything I bought for my recipe. Kyle does most of the cooking, but he’s incapable of planning.  So on his nights, he just uses whatever ingredients he sees.  It’s maddening.

When I have nothing in the pantry, this one-pot Creamy Spinach Orzo is the one meal I can always count on.  It’s comforting and delicious.  Sometimes I use arugula for a different flavor, or I add grilled, lemon chicken and use it as a side dish.

What’s your go-to, “we have nothing in the house” dinner?

    Other than frozen pizza, my go to easy dinner is red beans and rice. I usually use turkey kielbasa, but you can sub in any meat.

      This is a go to for us. Although we take a Mexican approach and have recently started calling them “burrito bowls” to be fancy. My go to is pasta with sauce. We grow our own tomatoes and can sauce so always have a bunch in the house.

    I try with some success to plan my meals according to days. So that way Kyle will know what’s happening for the evening and not eat up all the asparagus if it’s for Tuesday’s meal. It takes time though which is why I am only minimally successful at it,

    We have an instapot which has been a life saver. I can cook a 6 pound frozen solid chicken in an hour once it’s to pressure.

    Marcella Hazan’s tomato sauce (canned tomato, onion, butter) on pasta is something we always make sure we have the ingredients for, and it’s always delicious.

    This is a little less than highbrow, but TJ’s frozen dumplings + their shelf-stable Miso Ginger Soup + spinach has been a lifesaver. We also keep their frozen Tuna Burgers and have been known to slap together fish tacos/tuna burgers/etc. depending on what kind of starch we have around.
